SMOKED SALMON + AVOCADO OMELETTE RECIPE

INGREDIENTS

– 6 eggs
– 100g smoked salmon
– 1/2 avocado, sliced
– Handful of cherry tomatoes, halved
– Fresh herbs (dill or chives), chopped
– Salt and pepper to taste

METHOD

  1. Whisk eggs and season with salt and pepper.
  2. Pour into a heated pan.
  3. Once the edges set, add smoked salmon, avocado, tomatoes, and herbs.
  4. Fold the omelette in half and cook until eggs are fully set.
