GLUTEN FREE BLUEBERRY LEMON MUFFINS RECIPE

INGREDIENTS

– 2 cups almond flour
– 1 cup blueberries
– 3 eggs
– 1/4 cup coconut oil, melted
– Zest of 1 lemon

METHOD

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix almond flour, blueberries, eggs, melted coconut oil, and lemon zest.
  3. Pour the batter into the muffin cups.
  4. Bake for 25 minutes or until a toothpick comes out clean.
  5. Allow the muffins to cool before serving.
